My name is Jorge Zavala,
- I have always enjoyed working in the Restaurant Business and I have always taken a lot of pride, responsibility and professionalism including: Creativity and self motivation. Let me start by saying that I am a pretty well organized fellow at work, and I have always trained my staff to do things the right way.
- Working and sharing ideas together, communicating with my crew has helped me in a lot of ways to speed up work performance and find their positive attitude and creativity. I take great personal pride in food that I serve. Each dish must be one that I would serve to a guest in my own home. This philosophy keeps the standard of high quality food for every one that works in the kitchen.
- Cooking is like music. You combine different ingredients together to create a dish, just as you combine different notes together to create a melody. I live every day trying to come up with dishes that are new and different. That is my motivation in this life.
- The secret of making a menu more profitable is to obtain "key items" that have a good presentation, great taste, positive atmosphere and friendly service. Create a menu that will minimize any waste or spoilage that might be involved in the daily routine.
